Whole Wheat Blueberry Pancakes Recipe

Today, we gonna make whole wheat blueberry Pancakes

Ingredients

  • One Tablespoon Of Honey
  • Tablespoon Oil
  • Coconut Oil
  • Quarter Cup Of Yogurt
  • Quarter Cup Of Milk
  • One Egg
  • 2/3 Of A Cup Of Whole Wheat Flour
  • 3/4 Of A Cup Of A Fresh Blueberries
  • Maple Syrup
  • Cinnamon

Directions

1You want to start by adding one tablespoon of honey to a bowl. I’m using an organic honey which is why it’s so thick followed by a tablespoon of oil I’m using coconut oil but any would work and I’m just placing these ingredients into the microwave until they are liquefied makes it a whole lot easier to mix now add a quarter cup of yogurt I’m using Greek yogurt because it adds an incredible moistness to the pancakes and you’re also going to add a quarter cup of milk and one whole egg unfortunately no substitutions for the egg so mix those ingredients together I do not recommend using a spatula use a whisk it makes it a whole lot easier and now add a teaspoon of baking powder 1/4 teaspoon of baking soda and a quarter teaspoon of ground cinnamon which adds a beautiful warmth to these pancakes and just blend those ingredients together now you’re going to add 2/3 of a cup of whole wheat flour.

2I did say I wanted these pancakes to be healthier and work it just until it’s incorporated because overworking the flour will result in a tough and chewy pancake now add between 1/2 a cup and 3/4 of a cup of a fresh blueberries this is my favorite part and gently fold it in just till combined so now you’re ready to make some pancakes so I have a pan that’s been heating it’s been greased with oil and I’m placing quarter cup mounds of pancake batter using an ice cream scoop cook for about 1 to 2 minutes on each side before flipping and then pile them high on a plate top them off with some fresh blueberries for a nice garnish and drizzle atop some maple syrup these go incredibly with butter as well I just didn’t have any on hand I love that blueberry speckled golden brown color of the pancakes you’ll really appreciate how light and fluffy they are and that cinnamon and blueberry pairing is real see something special these make a wonderful breakfast this recipe is so easy to do and it’s also really good for you so if you want to see more healthy recipes.
