so let’s get started with our smoked sausage here and I’m just going to take some of this thin bacon and start on one end of the smoked sausage and start overlapping it we’re just going to wrap it around go all the way down the length of the smoked sausage when you put you ready to put your next piece on just overlap it little you won’t have to use any kind of toothpicks or anything to make it adhere to state Roger so you wants to so we’ve got a bacon wrap smoked sausage then we get the rest of these knocked out here so we’ve got all the banking wrapped around the smoked sausage.
some barbecue rub on the outside of that bacon we’ll be generous with it get a good coating and we’re going to flip it to the other side as well let’s go to bring some flavor to the party right here and just go give them the beautiful color so our smoked sausage is ready for some heat now so you can cook this on just about any kind of grill or smoker setup that you have you’re just maintaining the temperature about 275 degrees we want to keep the smoked sausage up brown the bacon let that rub start melting in building up.
Some layers of flavors then we’re going to come back and put a brush it with some barbecue sauce right at the very end so we don’t burn it it’s going to caramelize over the top and then it’s going to be outstanding so I’ve got my drum fired up about 275 degrees and that’s right where I want it I put just one little piece of wood in there to get it smoking.
Just a little bit I’m going to put these sausages right directly on the grate so this cook we’re just looking to brown this bacon it’s going to warm that smoked sausage up it’s already fully cooked smokes going to add a little bit of flavor to it at the very end we’re going to put a sauce on it just to glaze it up real nice take it inside Super Bowl right where our 15 minutes into our bacon-wrapped smoked sausage cook here.
That Bacon’s browned up just where I want it man it looks awesome now we’re going to put some sauce on it let this sauce do its magic five minutes on each side these bacon wrap smoked sausages are done that’s exactly what we were going for kind of this caramelized sauce that Bacon’s browned man that’s going to make for one heck of a sausage.
Cheese plate right there let’s give them inside and show you how we’re going to cut them up all right we’ve got our sausage back inside now it’s time for the most important part getting to try instead of doing a regular smoked sausage for a smoked sausage and cheese tray. we took some regular thin sliced bacon wrapped it around our smoked sausage seasoned it with some dry barbecue rub.
Let it go about an hour 15 minutes on the smoker 275 till it baking it nice and brown then we glazed it with a little bit of barbecue sauce till they got just that perfect caramel sticky color this is what we’re ending up with folks thank you for have goodness anytime you put bacon on something he knows good you know I’ve got to try one of these mmm that’s like bacon candy wrapped around goodness right.
When you’re getting ready to build a sauce to cheese plates for your party this weekend for the Super Bowl do a couple this smoked sausages wrapped in bacon dusted with rum and finish them off with a little salt come up a little bit smoked cheese to go with that platter guaranteed you’re gonna have one of the best toasted cheese platters .
