How To Make Spaghetti I Olio.

Just spaghetti with just olive oil and garlic sauce, it’s an italian absolute classic every household has their own version of it. This is my Nonna’s version and i am proud to show this recipe to you. Because it is just delicious, let’s go read ingredients so you can get started you’re gonna need some spaghetti of course some fresh garlic sliced, some pine nuts, some parsley, pinch about pepper flakes, good quality extra virgin olive oil, salt and pepper. Now here’s what you gonna do first you’re going to take pot fill it with water and sprinkle a generous amount of salt. Because this is the only time, we are using salt in this recipe. You’re not going to use salt in the sauce. You’re going to use salt just in the boiling water so because this takes about 10 minutes to come together less than 10 minutes. I’m actually gonna first do the very first thing. I’m gonna do is actually add my spaghetti to my boiling water and get that cooking.


Now I’m going to work on the sauce now in this little skillet here oops over about medium heat. I just turned it on I have about a 1/2 a cup of olive oil. Now to that I’m going to edit my fresh garlic. Now as you notice I’m sure I’m putting that into cold oil. Because this is about olive oil and garlic. So I want that garlic flavor infused into that olive oil. As much as possible, so we do that by starting with cold olive oil and bringing the two together the same time. They come to temperature at the same time. They release the flavor the garlic releases, its flavor and infuses it into that oil. So all I did on medium low heat.


I’m just going to let this go for a good 5 to 6 minutes or until I can see that the garlic is lightly golden. They can really smell and become super fragrant my garlic’s looking just how I want it. Now to this I’m going to add in some pine nuts. Now this is totally optional my grandmother always put pine nuts in her eye olio and that’s really my favorite part about this dish. Because I get all toasty and nutty delicious and a pinch of hot pepper flakes. You’re supposed to use pepper don t know I can’t find my local supermarket. So little pinch of hot pepper flakes will do the job and this is going to continue to cook for about another three to four minutes or so. Until the pine that’s our lightly golden toasted color that is absolutely perfect and I just turned it off.


I’ve also drained my pasta and I put it right back into the big pot. Because it just makes it easier for me to toss everything together oh yeah that’s just Don’s. Already delicious look how toasted they got. It’s just amazing a good amount of fresh chopped parsley, that’s also a crucial ingredient and some freshly ground black pepper mmm toss this together. Well you want that garlic oil to coat every strand of that spaghetti food delicious that looks good. I’m ready to eat. I’m ready to give us a taste. I mean I know, it’s going to be delicious. This is a weeknight go to of mine. Because it comes together in ten minutes and it takes just a few ingredients yeah mmm just right in my mouth will be hot though that is delicious, that girl got really crispy and really nutty. It doesn’t taste like strong garlic, it’s just it’s subtle.
