We get started all right these shrimp are from Georgia they’re beautiful big shrimp here’s some ramps asparagus green garlic some cilantro pea greens which are the immature tendrils before peas become peas garden peas shallots Carolina gold rice from Anson Mills fish sauce sugar salt black pepper and some oil so now our shrimp are salt cleaned it took about five minutes we’ve rinsed them off and now. we’re gonna cut them in half lengthwise these are big shrimp who’d you have to do a favor for to get these shrimp so now.I think we’re ready to go in the pan after we get these ingredients prepped this is the kind of dish that really can just take whatever you want to throw at it especially in the springtime we’ve had these shrimp now marinating with the shallots sugar salt and black pepper for about 20 minutes.
we’re just gonna give them a little saute if,you were doing this with long grain rice you would just break it up in a spice grinder and a mortar and pestle these are about a third the size of a normal grain of rice and then we’re gonna just let this cook for a little bit and then add some water.I love soups that you don’t have to use a stock you’re using water so you actually taste the shrimp and you taste the shallots and the fish sauce exactly so, we’re just gonna let it cook okay.
we’re gonna add the peas and the peas will take about two minutes to cook if you were using frozen peas you would just put them in and just proceed with the recipe because they cook a lot faster now we’re gonna add the little asparagus pieces the green growth the ramps and the cilantro kind of wait for the end for those okay so now our peas are just about tender and the asparagus are a little bit soft and the green garlic is pretty soft and we’re gonna add the ramps and they’re kind of roughly chopped up pea greens and then at the very end.we’re gonna stir in some chopped up cilantro but mint would be really good basil would be nice Thai basil and then just a little black pepper so there you have it shrimp rice and pea stew.
