We’ll just need some chicken breasts which I’ve had which I have pounded really thinly I bought I buy them this way at my market you need some cherry or grape tomatoes. I have half along with some pitted kalamata olives, some goat cheese, garlic tons of fresh basil balsamic vinegar salt and pepper and olive oil that’s it this is a meal this is a dinner you can put together a dish. I should say in about 10 minutes serve it along some steamed vegetables or some rice or anything like that you are in business perfect week nine wonders like my opinion so I’ve got some olive oil preheating in a skillet here or about medium heat you want it to get nice and hot now the chicken breast is gonna cook very very quickly so you don’t want to dry it out by letting it cook in the pan for too long so you want to make sure that you your skill it’s really nice and hot before you put your chicken in because you want to cook immediately so let’s just see if this is hot enough yeah like that.


I’m going to cook the chicken breast I’m putting them seasoned side down and I’m cooking them for about three minutes on each side it really depends on how thick your chicken breasts are I’m gonna season the flip side will let them cook fully take them out and I’ll show you how to make the sauce which literally takes like a minute my chickens fully cooked in the same pan. we’re gonna add in my garlic let that sizzle up for about 30 seconds you want to get rid of that raw garlic taste smells insanely samely good I love the smell of sizzling garlic I mean it’s one of I think most amazing smells in the world transports me to my childhood every single time because most of everything we cook you know in Italy as a little girl most of everything started with sauteed garlic and olive oil.


So, again for me brings it back to being little and I love that mmm let that cook for about 30 seconds add in the tomatoes and the olives seasoned lightly with salt because there’s all of the very salty pepper let that go for about 30 30 more seconds a dash of vinegar YUM for the saw that’s my friend the sauce is done yummers and then what I like to do is take a little bit of goat cheese which I absolutely adore feta would work really well here too but I think the creaminess and tankyness of the goat cheese or the salty olives and the sweetness of the tomatoes is just incredible.
