- Kalamata Olives
You’re gonna need some I’ve got some peppers here I’ve got yellow and red bell peppers along with an onion that I’ve sliced and the peppers. I’ve just cut them to about bite-sized pieces.I’ve got some white wine kalamata olives that have been pitted and also have some garlic uni of course rigatoni salt and pepper olive oil and just a few additional ingredients that we’ll go into at the very end but let’s get right into it I’ve got a really large skillet here with high sides with a better quarter cup of olive oil which I know sounds like us a lot don’t worry it’s gonna feel a lot of people and you’re really going to need it that’s one of the most important things when it comes to making really good good fried peppers.
You gotta have enough olive oil so that’s nice and hot you want to do about medium heat looks really yummy smells good the second onions and hit Peppers hit olive oil or any kind of oil really smells amazing now what I’m going to do is season these with some salt and pepper one because you always want to flavor every layer of the dish and two because a salt kind of help spring out the moisture out of the peppers and they’ll cook down really nicely that way and now this is going to cook for about half an hour on medium heat you want the peppers to cook down quite a bit and get really caramelized if you want to speed up the process just a bit cover the pot cover your skillet with a lid and you’ll be in business.
So, I’m just going to roughly give this about 30 minutes or so, stirring it every now and then to what develops really good color and then.I’ll show you the next step my peppers and onions have been cooking for roughly about 30 minutes or so and you’re looking for exactly that lots of color smells we good it’s softened a bit some of them still have a bit of texture which is great and to this point you want to add in your garlic and you want to let the garlic cook for just about a minute and also you want to make sure that one of the very first things you do before even getting started is get a nice big pot fill it with water sprinkle in a good amount of salt and let that come up to a boil because that’s going to be for your pasta you always want to have that ready for you because there’s nothing more annoying then everything being ready to go and waiting for the pasta water to boil nothing more annoying than that at least.
I think so anyway let this cook for about a minute.I’m going to actually take my pasta to the boiling water add that in come back and I’ll show you the next step to add a splash of white wine this is totally optional if,you don’t want to use wine by all means substitute with a little chicken stock or even vegetable stock would be delicious.I know I’m going to do I’m just reduced this down just a little bit so that the pasta is cooking and this is not overcooking and this is going to take roughly three or four minutes or so,I want the alcohol to cook out and the flavors to concentrate a bit so while that’s happening what I’m going to do is I’m just going to chop up some fresh basil you don’t have to be perfect you just need to give it a rough cut and then.
5I’m going to get ready to drain my pasta save some of the starch your cooking water about a cup of it or so and then.I might just even grate some cheese while I’m at it.I mean why not that looks like it’s about enough I also drained my pasta and reserved a little bit of the cooking water and now I’m just going to crank this up just a bit oops.I also have a little dab of butter here put the run in there along with your butter it gives it man oh it sounds odd but I just gives it a really sort of smooth richness to the dish that personally.I don’t think you could ever go wrong adding a little extra richness to any dish especially a pasta dish.I’m done making excuses for myself if it goes honestly I like it if,you don’t like it you don’t have to add it but I like it.
I’m also going to add just a splash of my cooking water and then.I’ve got my kalamata olives which again are totally totally optional but it’s the contrast with the sweetness of the pepper onions especially since they’ve been cooking for a while in the salty olives whoa delicious give that a good stir got a nice handful of fresh basil and migrated freshly grated Parmesan off and then just give everything a really good stir to combine and you’re pretty much done it’s very simple it’s very easy it’s relatively quickly it’s kind of like a little bit of a different pasta dish. that you might be used to but it’s really really outstanding so just give it a shot you can always play things up a bit you can add some extra veggies to this if you wanted to Oh mate the olives omit anything you wanted that is done let’s give this a taste a quick little taste.
