You’ll need some finely chopped onion got some bacon here which I’ll touch on in just a minute some these are frozen defrosted peas, some pasta shells you can also use two big teeny little bit of butter salt and pepper water and a little bit of olive oil just to kind of get everything going now this is an Italian classic that if you go through Italy you’ll see it being made in tons of different variations I mean some people like to put egg yolks in there’s some people like to put cream this is exactly the same way I ate it when I was a child when my mom makes it my grandma the only difference is they use pancetta instead of bacon which I sometimes do but I have to be honest I prefer the bacon here a little bit because it gives you the smokiness in the background this just fits there but it’s not like in-your-face but it kind of adds a little something exciting to the dish so I’ve got a little olive oil here preheating in my saucepan now to that I’m going to add in my onions now if you don’t want very strong like onion flavor you can use some spring onions or you can use a shallot.
I’m going for the full monty because that’s just what I grew up eating so just going to stick to it I’m going to put my bacon in there as well because I’m not looking for the bacon to be super crisp.I’m just looking forward to get cooked and crisp up a bit of course but I want that to cook with the onion and release the flavors and it’s just going to be delicious.I’m just going to keep an eye on this let it cook for about I would say four to five minutes and then we will move on to the next step that’s looking new yummy now.I did want to point out that if,you can get your hands on some fresh peas buy them but I can so I use my grocery store a little shortcut and go to the freezer section which it’s perfectly fine it’s one of my favorite ingredients to have one hand it’s really a good shortcut because you’re picked at the peak of their season and then just frozen okay so we’ve added our Peas I’m going to add in water.
I’m just going to let that come to a boil and then we won’t add in our pasta now this isn’t a soup and it’s not a sauce it’s like something in between so, I’m going to add pasta and let this cook up and I’ll show you well let’s get let’s this let’s get this to come up to a boy I’m too excited I’m getting tongue twisted now that this is at a rolling boil.I’m going to add in my shell for my confit yet you can also use any shortcut pasta you’d like now I’m just going to let this go I’m actually going to season in a bit with some salt and pepper and then something like this go for about I would say nine minutes or so or until the pasta is fully cooked through and then we just have a couple of extra ingredients to add to this and it will be done this is done the pastas fully cooked through.I’m gonna add in my dab of butter so good and then a good grading of parmigiana.
I surprised I mean come on this is kind of what pulled it all together it’s just so simple and it’s so easy and you can put it on the table within 20 minutes from start to finish and you might already have these ingredients on hand so there’s a few things you should always have in your freezer and peas and some bacon and a box of spinach or on the top of that list in my opinion stir this all together so you can see it’s not a soup it’s not a sauce something in between and it is dee-licious comfort food it’s very best my kind of comfort food anyway just love it we’re excited this is going to take me a second because it is boiling hot.
