We need easy on weeknights the ingredients are simple you need some fresh tomato. you can use any pasta shape of your choice but I particularly love these what I have here is some tuna that was canned in pure olive oil. I’ve drained it and I put it right in here some basil garlic olive oil and some salt now I’ve got a pot back they’re ready and waiting it’s salted and it’s up to a boil to cook my pasta but first I want to start my sauce because everything comes together in about 15 minutes or so so I’m going to get it going you need a good amount of olive oil.
I would say maybe 3 or 4 tablespoons because remember there’s not a whole lot to the sauce and you want to make sure that you use really good ingredients because it’s going to be the sauce is so simple but when you’re using good olive oil and using really good fresh in season tomatoes that are sweet and they’re really juicy they make for a fantastic salsa well you don’t you don’t need a lot of ingredients so keep it simple keep it easy I’m going to turn this down to low because I don’t want the garlic to sizzle too much I want it to kind of heat up with the olive oil in the meantime I’m just going to chop up my tomato and then.
We’ll move forward alright this looks fantastic now you don’t want your garlic to get you know dark because the darker gets the more fitter it becomes so nicely light like nice lightening nice and light and golden add my tomatoes turn it down give those a stir oh and it smells so good already I want to just hit them with a pinch of salt now salt is not only a flavor enhancer but also really helps draw out like liquid out of vegetables or anything really so it helps the sauce get really nice and sweet and juicy right from the beginning and then I’m just going to take half of my basil my basil leaves nice little basil leaves add them right in and I’m just going to cook this for about 10 minutes in two minutes from now I’m going to add my pasta to the boiling water because I don’t want the pasta to sit while the sauce keeps cooking.
I’m going to just time these so that they get done around the same time these need 10 minutes so two minutes from now my pasta to the boiling water and then. I’m going to drain it I’m gonna bring it back here I’m going to also reserve a little bit of the starchy cooking water in case I need it and then we’ll proceed and that’s really it and I promise you I know it’s simple and easy which is what I’m all about and I know you appreciate but this is simplicity at its best and when done right with good ingredients is one of the most amazing dishes in the world and I think gonna absolutely love it if you’ve got fresh tuna you can poach it and add it right in but I actually think that the cam stuff the really good stuff works even better so the world is your pickle you do you boo but this is what I prefer my sauce has been cooking for eight minutes it’s got two more minutes left my pasta takes two more minutes.
5I’ve got my timer going at this point. I want to add my tuna to the sauce along with a good pinch of salt and then you just kind of want to mix it through and then you don’t you can just turn down too low at this point because really everything else is pretty much cooked so I’m just going to babysit this then drain my pasta and then married everything together and it’s going to be good add my pasta you’re going to add some of my starchy cooking water and then just stir that around and then what you want to do is you want to make sure that after you let things cook for just a few seconds you want to turn this off I’m going to add a little black pepper to this as well and let it sit for just a few minutes so that that sauce really adheres and thickened as it sits with the pasta in this back view less.
I’m just going to do that and then we’ll stir it up now tell me you don’t just want to shove your face into this look that sauce really adhered to the pasta it is making my mouth water and it smells incredible. I added some black pepper just a little bit more.
