You’re gonna need some octopus of course some fresh diced celery, some parsley, some garlic ,some lemon ,good quality extra virgin olive oil, salt and pepper that’s it now this is still frozen.you don’t need to thaw it out don’t worry about it now the first thing we’re gonna do is get a big pot fill it about
halfway or so with just water and now all.I’m going to do is put my off to push right in here okay now once this comes up to a boil. I have it over medium- high heat once this comes up to a boil. you’re going to partially cover it just like so and you know let it go turn it on to turn down to medium low and let it cook for an hour and a half and after an hour and a half.
I’m going to show you exactly what to do my octopus cooked for an hour and a half and let it cool for about a half hour now don’t want to freak you out okay because this is really really good and so the flavor of octopus is very mild it’s not like if,you’ve ever hit in salmon it’s nothing like that salmon is a bit fishy oily this is not it’s very mild it carries a lot of flavor very very well and all I’m going to do now is just cut this into bite-sized pieces now to my. I have to flip it up chopped in bite-sized pieces. I’m going to add in some celery and this is not you know a huge amount but obviously. you’re going to adapt it depending on how much octopus you’re cooking parsley a piece of garlic that. I’ve just cut in half and you want to just put it in there like so, you don’t want to mince it because you don’t want you know garlic everywhere you just want a little bit of a note of garlic a few tablespoons of olive oil good.you know get good quality extra virgin olive oil because.
3You’re getting this you’re not cooking it so you want to make sure it’s got great flavor season it with salt really needs it if, you don’t think it does trust me makes a big difference when you season it well and then some lemon juice to taste but you should be able to taste it because you essentially what you’re making is a vinaigrette really and these are all the ingredients that go into it. I mean it’s really simple really easy but it would just not be Christmas Eve without it look at that smells great looks great it’s just perfect it’s making my mouth water now it’s tempting as this looks this has got to go into the fridge for at least two hours it really needs to marry all the flavors need to get to know each other and it’s really best served cold so this go into the fridge for a couple of hours I’m gonna give it a quick taste it’s perfect hmm it’s delicious now wait till you need it in a couple of hours when all
the flavors have really gotten into that octopus.
