Mexican Casserole Recipe

Today I’m Making A Mexican Casserole.


  • 1 Pound Of Ground Beef
  • A Half A Cup Of Chopped Onion
  • 1/4 Of A Cup Of Chopped Jalapeno Slices
  • Tomatoes
  • Black Beans
  • One Cup Of Sour Cream
  • 1 Cup Of Mexican Cheese
  • Black Olives Salsa Sour Cream


1Let’s get started pre-heat your oven to 350 degrees and take a 2 quart baking dish and spray it with nonstick cooking spray in a large skillet add 1 pound of ground beef, and a half a cup of chopped onion Brown this over medium-high heat and then drain off any excess liquid then add 1/4 of a cup of chopped jalapeno slices 1 14 and 1/2 ounce can of diced tomatoes 1 15.

2A quarter ounce can of corn that’s been drained 1 15 ounce can of black beans that have been rinsed and drained, and 1 package of taco seasoning mix stir together well and then reduce the heat and let it simmer for about 5 minutes then place for small flour tortillas into the bottom of your baking dish overlapping them now spread half of the beef mixture over the tortillas.

3Then spread one cup of sour cream over the mixture now place for more small flour tortillas on top then add the remaining beef mixture now just cover it with foil and then bake it in the oven for about 25 minutes then remove from the oven and sprinkle on about 1 cup of Mexican cheese blend let it stand for a few minutes to let the cheese melt and here it is Mexican casserole.

4This is also good made with ground turkey and you can add your favorite toppings such as black olives salsa sour cream whatever you like for this recipe.
