- Some Currants
- Some Whole Milk
- Unsalted Butter
- Melted Yeast
- Some Lemon Zest
- 2 Eggs
Some all-purpose flour. We’re near the sugar, pumpkin pie spice and salt some this is just some candied orange peel, some currants, eggs, some whole milk that. I just heat it in the microwave for about 30 seconds unsalted butter that’s been melted yeast. You’ll need some lemon zest and you’re going to need just a couple of additional ingredients for the glaze.which is going to come later on now these are just cute they make your house well incredible and they are delicious to the max. I mean they really are that good there are million in one variations of them this is just my take on it. Let’s get started. I’ve got a little Bowl here and in here I’m going to put my milk my milk is about 110 to 115 degrees.I just pop it in the microwave in a microwave safe cup for about 30 seconds and it’s still always perfect.you can always do it in a little in a little saucepan if, you don’t want to put it in microwave.
I’m just going to take a little bit of sugar sprinkle sugar over the top and a little bit more than that and then take my yeast it’s one envelope. which is about two and a quarter teaspoons if,you don’t have the envelope of yeast. I’m going to give us a quick Little Mix nothing too crazy and I’m going to let this sit aside for about three to five minutes until the top gets really really foamy now.I will say that with any yeast dough.when it comes to the yeast the milk was either too hot and it killed it right away the milk was either too cold or the water by the way and that makes it not activate or the yeast was old so if,the yeast isn’t foaming don’t carry on the recipe so that’s done let that just sit there for a few minutes now. what I have in here are pretty much all my dry ingredients including the sugar.
I’ve got pumpkin pie spice now pumpkin pie spice is just a blend of cinnamon and nutmeg ginger and all things delicious you can make your own blend you can get my blend and Laura in the kitchen calm or you can simply just add just cinnamon or you know cinnamon and ginger or whatever spice.you like. I just always have pumpkin pie spice on hand whether it’s fall time winter or a twat because.I love it so let’s just give this a good mix.I’m going to pop this into my mixer that. I have a hook attachment to this just makes it a lot easier to knead because if, I have to do this by hand. I’ll be here all night okay a little extra there and then we have that done. I’m going to just actually simply get some lemon zest going. I just need about a teaspoon and a half of lemon zest and I do want to mention that if,you don’t have the candied orange peel substitute it with just a little bit of fresh orange zest works just as well.
So, I’m gonna put a little bit of lemon in here clean it up a little bit and wait for that yeast to be activated the yeast is just about ready you can see super filming on the top and you can really smell it which is super important now. I’m going to just take my two eggs and my melted and cold unsalted butter. I’m just going to whisk these together. I want to do that before. I add it to my dry ingredients all right add that in along with my yeast mixture this recipe is incredibly easy to do you cannot mess this up literally it’s that simple kind of plop everything in there just about everything anyway at one time let it mix. You’re good to go okay. I’m just going to mix this this is going to mix what about this is about low speed as low as it’ll go and then let’s just mix while scraping the sides of the bowl every once in a while for about four minutes or until the dough starts coming together pretty well.
You don’t want this to go for too too long three to four minutes and so,you have a nice smooth dough that’s Kip pull together will be just enough time and then. We’ll add in our final ingredients before they get to rising the dough is looking good smooth sticky but not the kind of sticky that’s like all over your fingers just yet anyway now add in my currants.you can also use raisins but.I prefer currents in here and my candied orange peel I’m just going to mix this for about 30 seconds to a minute until everything is kind of really well combined and then. We’re going to dump it onto our board and get this ready to get to rising it looks good and it smells amazing even though it hasn’t even hit the oven yet but you can really smell those spices quite a bit. I just floured my surface a bit and I’m just going to get all this out right on there get this little bit out of here.
I want to make as many buns as possible okay let the flour kind of help you out knead this a bit sprinkle a little bit more if,you have to sometimes it also depends on how much humidity is in the house you might need to add a little bit more flour sometimes a little bit less than just play part when it comes to baking as well okay but you can see this is sort of really smooth and easy to work with which is always a plus when it comes to making dough anything with dough because I’ve had my fair share of frightening experiences okay. I’m just going to pull this together into a ball that looks good just try to pinch the bottom.I’ve got an oil Bowl here that. I just oiled with some vegetable oil. I’m just going to flip it over to make sure the top is covered well that way it doesn’t form a skin cover this really well with some plastic wrap and then this is going to go somewhere warm like.
I’ve mentioned a million and a half times.I put mine in the microwave without turning the microwave on of course because that way it’s away from any drafts and since it’s right above my stove. I always got something else in the oven going it keeps it very warm and it does rise perfectly this is gonna go in there for about an hour and a half to two hours depending on how warm your spot is and this is going to rise until it’s about doubles and if not a little bit more in volume. I’ll show you what it looks like once it’s done my dough’s been rising for a couple of hours and look at that looks fantastic. I’ve got a really well floured surface and I also have two baking sheets lined with some parchment. I’m gonna take my dough out which smells amazing by the way oh it smells like a really delightful almost like a cinnamon roll because it’s got those spices in there it’s delicious all.
I’m doing is just kind of I punched it down and then.I’m just kind of rolling it into a log because.I want to cut out 16 equal pieces out of this let’s cut it in half cut that in half and then. You know cut the map in half and until you have 16 pieces okay then take each one.I like to just roll it in a little bit of flour and just form it into a ball pinch the bottom to kind of seal it and I like to put my 8 on each one a few inches apart because these will expand and it’s totally fun if,they touch each other. I mean it’s all it’s all had baked together and be beautiful and gorgeous anyway so who cares all right they’re looking good just make sure you spread them out a bit because as they bake they will puff up but anyways all right these are looking right.we’re looking good don’tdo now these have to rise look at me it’s like.
I’ll go back and focus okay these are going to get covered with just some kitchen towels and they need to go someplace warm again to rise for another 45 minutes or so or until they’ve doubled up a bit and they’re nice and plump licious all right let’s get this going. I’ll show you what they look like when they’re done and we’ll do our final step before they go into the oven my buns have been rising for about 45 minutes to an hour. I think it’s been about an hour and they’re perfection oops yeah look at that now. What I’ve got here is some egg wash which is just one egg bean with a little bit of milk but you could even use water it doesn’t really matter and I want to brush this egg mixture all over the top and down the sides of each one really really well this is going to make it just develop a beautiful color as they bake so, do not skip this part all right we have two last one done okay now.
You want to get make sure your ovens preheated to 375. I’m going to pop these bad boys in there for about 20 to 25 minutes or until they’re a beautiful golden-brown color then they need to cool completely right before so, that we can get to icing them. I can’t wait my mouth is salivating because they over the dough already smells so, insanely good my buns were in the oven for about 20 minutes and I mean look how gorgeous they are that glossy beautifulness from the egg wash works wonders trust me now to make it a glaze but. we’re initially making is kind of like a royal icing which is powdered sugar or confectioners sugar and egg white and just an additional small splash of milk just to get it to the right consistency so all.
I’ve got here is my powdered sugar.I’m gonna add in my egg white this is going to make it super glossy and delicious.I’m just going to use my handheld mixer here whisk. whatever you want to call it and make sure that this gets all nice creamy and smooth.I’m going to most likely have to add like a tablespoon of milk to it just to get it to the right consistency that looks great. I added about a tablespoon and a half of milk to that just to get it to the right oh! yeah it’s the right consistency it looks great now. I have here is just a large ziplock bag no tip nothing so, large ziplock bag just tuck in one of the corners into a large cup just to make it very easy on myself.
