Today i am making, Caprese Skewer.
- Fresh Mozzarella
- Virgin Olive Oil
- 1/2 Cup Of Cheese
- Minced Garlic
- Fresh Oregano
- Some Salt
- Some Pepper
- Tomic Vinegar
1So it’s based on the caprese salad that classic Italian salad that combines fresh mozzarella tomatoes and basil. I’m using to achieve these little balls of fresh moon Zarrella but you can do it with regular mozzarella to just cut it into little half inch cubes I’m going to marinate my mozzarella really simple marinade that takes some extra virgin olive oil.
2I’m going to use for this amount of cheese about 1/2 a cup and to that I’m going to add some finely minced garlic this is about 3 cloves of minced garlic and some fresh oregano about a tablespoon of minced fresh oregano I’m going to add some salt and some pepper right to my marrying and then I’m going to toss in my little balls of fresh mozzarella a couple of turns a freshly ground black pepper.
3You can use regular table salt I’m going to use one of these cute little artisanal results this is a celery so it’s the salt that you get when you take the fleur de sel off the top of the salt pan at the bottom is the celbrate has a little more flavor a little more mineral content and it’s going to be absolutely delicious my marinadenow will take my fourth coat and just whisk this up here also drizzle this yeah normal Tomic vinegar then wash some cherry tomatoes and some beautiful fresh basil and put these on little skewers in an alternating pattern for a wonderful vibrant beautiful easy appetizer.
4So all I’m doing now to make this beautiful platter it is so easy is I’m just taking a little cherry tomato putting it right on one of these toothpicks you can use regular toothpicks or the skewer size toothpicks then I grab a basil leaf and it’s a really big basil leaf I might cut it in half and then a little ball of that marinated fresh mozzarella.
5I place it right on my platter but I’m going to show you just how pretty that looks you can do these ahead up to eight hours ahead just keep them covered in the refrigerator but before you serve them you want to take them out let them rest for about 30 minutes so the flavors really come out and marry.
6So there it is my absolutely beautiful platter of little caprese skewers wonderful bite-size appetizers and that leftover oil that I use to marinate the mozzarella makes a fabulous dipping sauce for Italian Brants you can serve that with your meal as well I’m going to pop these in the fridge covered with a little plastic wrap but about a half hour before dinner I’ll take them out they’re going to be wonderful happy cooking.
