Today I am making Broccoli Bacon and Tortellini Salad.
- 1/4 Cup Of Sugar
- 3 Tablespoons Of White Wine Vinegar
- 1 Cup Of Mayonnaise
- Half A Cup Of Green Onion
- Chopped Half A Pound Of Bacon
- Half Pounds Of Fresh Cheese Filled Tortellini
- Fresh Pasta
- 4 Cups Of Fresh Broccoli
- 2 Cups Of Grape
1We will be using 1/4 cup of sugar 3 tablespoons of white wine vinegar and 1 cup of mayonnaise here. I have half a cup of green onion that’s finely chopped half a pound of bacon cut into wide chunks one and a half pounds of fresh cheese filled tortellini and you’ll find this in the refrigerated fresh pasta section of any grocery store. I have 4 cups of fresh broccoli that I’ve trimmed into small florets and 2 cups of grape tomatoes.
2Now that we can do at the same time that’s right apply a 4 quarts of water bring it to a boil and I’m adding 1 tablespoon of salt and that will help add flavor to the pasta and keep it from sticking so here I have 8 ounces of bacon that I’ve cut into nice wide strips and that’ll be a really nice bite of bacon in the salad so while Allan’s crisping up the bacon I’ll show you how to make the dressing I like to combine the sugar and the vinegar in a glass dish and microwave it and that will make sure that the sugar is dissolved and microwave it on high for 1 minute.
3So Alan the bacon looks perfectly crispy and so go ahead and drain it on a paper towel so now I’m going to add the mayonnaise I like to use a whisk thoroughly combine these ingredients so because this is fresh pasta it’s going to cook in only two minutes and that’s why we want to have the dressing in the bacon already prepared. I want to bring the water back to a boil before we set the timer so two minutes have passed.
4You can tell our pasta is done because it is floating and tender so now we’re going to take this over to the sink and rinse it with cold water so now I’m going to shake off the excess water and I’ll spread the tortellini out on a cookie sheet to cool hands off the bacon Alain so now everything is cooked so it’s just all a matter of putting everything together that’s right it’s a piece of cake throw it together.
5I’m going to use a large bowl and add the dressing that we made I’ll add the green onion a lot of fresh broccoli and you’re adding the broccoli because it’s a little firmer that’s right it’ll absorb some of the dressing so now it’s time to add the tortellini and of course the more ingredients are adding the little topper. I’d use this to her time for the beautiful bacon make sure everybody get some bacon goodness do it mm-hmm one of my favorite summer side salads all.
6I would add is some grilled chicken making a meal that’d be nice so I like to add the tomatoes laughs because they’re more delicate it’s time for one last stir and we’ll add some fresh cracked pepper and as you can tell you get a pretty good sized salad with all the ingredients.
