You’re gonna need some good-quality chicken broth some fresh baby spinach some cooked chicken that I just shredded a little bit of ice some lemon parsley, salt and pepper now.I told you this was easy there’s not going to be no sauteing nothing it’s just pretty much everything in a pot it cooks itself in 20 minutes to prepare dinner now yesterday.I made a whole roast chicken now.I’m going to to its put in my chicken broth and you want to make sure you use a good quality chicken broth and all.I’m gonna do is let that come up to a boil and once it comes up to a boil.we’ll add pretty much everything else my chicken stock is up to a boil so now, I’m going to add in my rice and my chicken my chicken like.
I said it’s already cooked so,I just shredded the dark meat and I’m gonna put it right in here it’s that simple and easy and I’m going to season it with some salt and pepper low sodium or reduce sodium definitely have a lot less salt which means you can you know you can you’re in charge of how salty you like your food because otherwise it can be some of some kinds can be so overwhelmingly salty it’s unbelievable so buy one that’s always reduced sodium or low sodium and all I’m going to do is let this cook for about ten minutes or so or until the rice is completely cooked my soups been cooking for about ten minutes since I put in the rice and the chicken the rice is back cooked through.
I mean depending on the kind of rice you use mine takes about ten minutes to cook now to this I’m going to add in my spinach and if you don’t have fresh spinach on hand use frozen spinach or don’t use spinach at all use whatever you have leftover this is why you know this is the kind of soup that you can just throw together with whatever you got if you got some cooked potatoes come up put them in there if you have some cooked up veggies put them in there oh and judge you I don’t care that’s what I do it’s going to turn that off because the spinach just needs to wilt and already has.
I’m going to finish it with some fresh parsley and because I love I kind of like refreshing taste.I’m going to put in a little bit of lemon zest and the juice of a whole lemon it really kind of brings the soup to a whole new level and it makes it taste bit more interesting with a fresher bit new word you know which I like that but if,you don’t like it.you don’t have to add it if,you don’t have parsley don’t add parsley again it’s one of those soups that you can just be your own boss going to juice the whole thing in here last bit of the lemon give this a long last stir look at that mmm let me so so yummy smells so fresh. I really love that ladle up so excited you know I love roast chicken apart from the fact that it just tastes fantastic when it’s just you know right out of the oven.
5I just love having roast chicken on hand.I am one of those old-fashioned people that just feels much more secure when I have food in my fridge ready to go at any time and I’m really excited to take a bite of this it’s lovely I love its golden smell all delicious smells even better mmm that is so good that is so quick and that is so simple it’s ridiculous but it is so,delicious.
