I’m making a baked banana oatmeal.
- Two Cups Of Rolled Oats
- Teaspoon Of Baking Powder
- 1/4 Teaspoon Of Kosher Salt
- Teaspoon Of Cinnamon
- Tablespoon Of Turbinado Sugar
- Teaspoon Of Vanilla
1I’ve got two cups of rolled oats here and you want to make sure to get good old-fashioned rolled oats because if you change the type of oats that you use it will change the amount of liquid journey to that I’m adding a teaspoon of baking powder 1/4 teaspoon of kosher salt and a teaspoon of cinnamon. you’re going to start out with a medium banana and you’re just going to use the back of a fork and just mash it up against the side of the bowl until you’ve got like what looks like a banana baby food now the banana not only infuses banana flavor into the oats but it’s also going to add sweetness to the dish.
2We won’t need to use any additional sugar 2 egg whites you could also do a whole egg here but I find the whites give it a little more fluff one and a half cups of 2% milk and again any milk you have on hand does work and a teaspoon of vanilla then just mix that all together. and once you’ve got all the wet ingredients incorporated you’re going to pour them right on top of the dry ingredients and then again mix it together now I’ve got an 8-inch metal pan that I’ve lightly coated with a layer of coconut oil you could also do butter or even a little cooking spray here but just make sure you grease.
3We are going to line the bottom of the pan with one sliced banana then take your oat mixture pour that right on top of the bananas and just even out the top of it and then we’re going to take second banana sliced up and just lay those right on top so you’ve got bananas in the bottom but that is in the middle and bananas on the top and then last tablespoon of turbinado sugar this just gives it a nice caramelized kind of sweet crispy topping if you really wanted to keep the sugar low.
4I’m going to pop it into my 375 degree oven for 25 minutes this is definitely. I got to tell you it smells even better the whole kitchen smells like a big ripe banana now I’m just going to give it a few minutes to cool off and then we’re going to cut it up into four squares this pan makes four servings.
